It raises the risk of heart disease and stroke, which is why small daily choices at the kitchen counter can add up.

What researchers found

The paper was written by Michael Metoudi, Isabelle Sadler, Shireen Kassam, and Dagfinn Aune, with affiliations including Plant-Based Health Professionals UK, King’s College London, the University of Winchester, the Norwegian Institute of Public Health, Oslo New University College, and Imperial College London.

The team reviewed 10 publications covering 12 long-term observational studies from the United States, Asia, and Europe. Together, those studies tracked groups ranging from about 1,150 to more than 88,000 people.

People who ate the most legumes, such as beans, peas, lentils, and chickpeas, had a 16% lower risk of developing high blood pressure than those who ate the least. For soy foods, including tofu, soy milk, edamame, tempeh, and miso, the lower risk reached 19%.

Fresh tofu and soybeans, foods highlighted in research linking regular soy consumption with a lower risk of high blood pressure

The palm-size rule

The review also looked at how much people ate. For legumes, the clearest benefit appeared up to about 6 oz. a day, close to a generous cup of cooked beans or lentils.

For soy foods, most of the reduced risk appeared at about 2 to 3 oz. a day. Eating more than that did not show a clear extra drop in risk, so the takeaway is not to pile tofu onto every meal.

Read More: Zeno of Citium, founder of Stoicism: “nothing is more harmful to sound understanding than self-deception,” and the reason it traps you runs deep

Putting a small block of tofu in a stir-fry, a serving of edamame, or a glass of soy milk could fit the pattern seen in the research. Simple enough.

Why tofu may help

Tofu and other soy foods contain potassium, magnesium, fiber, and plant compounds called isoflavones. Potassium helps the body handle excess sodium, while magnesium helps blood vessel walls relax.

Fiber may also matter. When gut microbes ferment soluble fiber, they produce short-chain fatty acids, which scientists think may help blood vessels relax and widen.

Soy’s isoflavones may add another layer. These plant compounds have been linked with lower blood pressure, which may explain why soy foods showed a slightly stronger association than legumes overall.

Not a shortcut

This was a meta-analysis, meaning researchers combined results from earlier studies to look for a bigger pattern. But most of the data came from observational studies, so the results cannot prove that tofu alone prevents hypertension.

The researchers also noted differences between studies, including food types, cooking methods, diet quality, and how high blood pressure was defined. That matters because a tofu bowl with vegetables is not the same meal as deep-fried tofu with a salty sauce.

Professor Sumantra Ray of NNEdPro Global Institute for Food, Nutrition and Health called the dose-response analysis useful, but warned that unmeasured factors cannot be fully ruled out. That is a careful way of saying the finding is promising, not final.

What about gout

Some people avoid tofu or soy milk because they worry about gout, a painful joint condition linked to uric acid buildup. That concern often comes from the fact that soy contains purines, natural compounds also found in meat and seafood.

Read More: Keeping your mind sharp isn’t about age, it’s about seven everyday habits, and the reason they work is simpler than you might think

A 2015 study highlighted by the NUS Saw Swee Hock School of Public Health found that soy products were not linked to a higher risk of gout. The same report noted that shellfish and meat can have a different effect on uric acid.

A 2022 systematic review in Frontiers in Nutrition also found that tofu and some soy-derived products had no significant effect on uric acid in the reviewed human studies. People with gout should still follow medical advice, but tofu does not deserve a blanket ban.

How to use it

At the end of the day, the study points toward a familiar idea. More plant-based protein, especially from legumes and soy, may support heart health when it replaces less helpful choices.

That could mean tofu with vegetables, lentil soup, chickpeas in a salad, or edamame instead of a salty snack. The bigger picture still matters, since the WHO lists a high-salt diet, inactivity, excess weight, and alcohol as risk factors for hypertension.

The official study has been published in BMJ Nutrition, Prevention & Health.

Could a small block of tofu on your plate really matter for your blood pressure?
